So I am brand new to using this controller and just need the nitty gritty to run my still most efficiently.  I do not understand exactly what the manual is telling me to do.

I have a bain marie style pot still.  I want to bring the temp of the bath up to 107 C and keep it there for my stripping runs that last 8-12 hours.  Can someone tell me what my settings need to be for this?  Don't be afraid to treat me like an idiot (I kind of am one).

Thanks,
Nate

First, you need to complete the wiring at first. You can refer the wiring examples in its manual for details.

Second, you need to know how to change the set temperature. You need to press the up or down arrow key two times, so you can adjust the bottom display, which is your set temperature.

Third, you need to know how to change the temperature display from Fahrenheit (default) to Celsius. You need to change parameter COOL to 2.

Then you can process a test run. If the control result is not good enough, you need to run auto-tune at your preferred temperature.

Here is a tutorial video for this controller. It will give you some basic ideas.

Thanks!
I have already been using it, so it is wired and in Celsius.  So all I need to do is change the SV temperature to 107, turn it on auto and it should regulate itself?
Anything I need to do with the A/M button?
Really appreciate the help and the video.

No need to use A/M key. For ramp & soak model SYL-2342P, A/M key is used to enter the program.

Again, if the default setting is good enough for you, you don't need to run auto-tune.
