Help with a solution for replacing rotary temp controller for a chocolate melter

Howdy,

Newbie here.

We have a small chocolate factory in WI.

We've acquired two 100lb chocolate melters with rotary temp controllers. (see pic)

We are scratching our heads to create a solution where at 6pm the melters temp increases and stays at 115F; then at 7AM, the temp drops to 85F and maintains that temp until 6pm.

What do we need to accomplish this?

For your requirement, you can use Auber's ramp & soak controller SYL-23X2P. It can be programmed as multiple steps, and you can program like hold at 115F for 4 hours and reduce the temperature to 85F and hold there for 5 hours.

But this controller doesn't have clock timer. There are two walk-around solutions. One is you can program a long delay step at first. So this PID can turn on your heater later.

Another option is, you can use a kitchen timer to delay turning on the PID. You can plug in this PID controller to your kitchen timer, then program it to let it on at specific time.
